I'll finally make it back to the Farmer's Market, next weekend, and hopefully over the next few weekends, until they close on November 1st. I hope to find some fresh fennel, and an assortment of other veggies to add to my roasts, and other Fall/ Winter cooking. Spaghetti squash is in season, and this is a great time to stock up on salsas to use as condiments for pan grilled pork chops, broiled or roasted chicken, and of course fish.

The holidays are coming, everyone, be on guard, and plan ahead, so as to minimize the damage associated with eating family favorites, which as we all know, are rarely friendly to whatever eating plan you happen to be on. Having great tasting alternatives, around, is the best way to stay on track.

Alternatives, I am always looking for them. Holidays are hard for all of us, and also for me fellowships in church. We have a study that Jim leads on Friday nights and now another one here on Sunday afternoons, but that one will only last 13 weeks. Let me just say, we Christians like to eat. I am going to try making the Libby's recipe pumpkin pie with coconut milk and Splenda. I will let you know how it turn out. Of course no crust, I just dust the pan with almond flour. Have a good one :)

Thanks, the pumpkin pie sounds like a winner. I agree, we do like to eat, and having time of fellowship is as good as an excuse, as any, to do so. You have a good one too, and tell Jim I said hello. :-)

GiGi, I am so glad to see the word Christian in your comment. At this time in history it is important that we follow our beliefs and are not afraid to let other know we are Christian and yes, we are good eaters as well. Prayer groups, Bible study groups and food just seem to go together. I too will try the Libbys recipe, sounds like a winner. Have a great day!
