Tomato and basil chicken sausage with green beans, homemade (keto friendly) minute muffin, and the rest of my Diet Dr. Pepper I didn't drink for lunch.

Wow, not drinking the whole DP at one setting is a major NSV and your dinner looks great. Kudos!

What is the recipe for the muffin?

1/4 cup golden flaxseed; 1/2 tsp baking powder; 1 egg; dash salt; 1/2 tsp vanilla; 1-2 packets Splenda (if use a liquid sweetener like stevia glycerine this cuts down on nc count) and 1 TBS sour cream or heavy whipping cream. Combine egg, salt, vanilla, sweetener and sour cream (will be lumpy) or HWC; Use a microwaveable dish/cup; stir wet ingredients into dry; allow to sit for a couple of minutes fo flaxseed absorbs some of liquid; microwave 1minute to 1minute 30 seconds. Allow to sit for a minute then remove from cup. I cut mine in half and toast it (dries it out some). Using Splenda carb count is around 2.5-3.

Lol, I knew the soda was gonna be "an issue".... It was a gift from my s/o. I've already turned down an ice caramel macchiato this week, at least he got diet, ya know? So I went ahead and took it. At this point, I had finally got rid of all the sodas in the house (again), including the Diet Ginger Lime Coke. That birthday party about killed me, I swear! As for not drinking the soda in one sitting, not a problem. I'm actually not that fond of soda, just like the fizzy sometimes.

That's NOT the recipe I used, but I'll have to try it sometime. I just picked up a quickie recipe I found, C- 8.99 NC- 5.24 (For me anyway, carbs will vary depending on brand, amount, etc.) Recipe/Directions: 1 TBSP. Coconut flour, 1 TBSP. Almond flour, 1/2 tsp. Baking Powder, 1/2-1 tsp. Cinnamon, 2 packets of Stevia (in the raw), 1 tsp. butter (Country Crock LIGHT was used here),1/2-1 tsp. Vanilla Extract, 1 Large Egg. Directions: Mix all ingredients well, put into a mug or container of your liking- take caution though, it will rise A LOT (I used a cupcake wrapper in a small sauce bowl), Microwave for 1 minute. Let stand about 30-60 seconds to set. Enjoy. Added spices can change up for a different flavor. This is also tasty as a kind of savory dinner muffin.

Zero calories/Zero Sugars in the soda, not an issue. I love Diet Dr Pepper.
