Happy Easter! The final days of Lent are here and I've managed to find food choices on Fridays without meat. Before going low carb Lent was easy since pasta, pizza, and other carb based foods without meat were quick and easy. I'm not a big fan of fish unless its coated and deep fried. Had salmon a few times, but still not a favorite. Since Nov. 11, 2012, I have lost 45 lbs, first on Atkins Induction and then moving to VLCHF Ketogenic diet. Now I'm leaning towards a Paleo diet which parallels what I've been doing anyway. I see this as a permanent way of eating to lose and maintain and to keep blood sugar normal. I find that it's not hard at all and something I can stick to so it works for me.
