and I have discovered that these kinds of days make me want to....


surprise, surprise!! Lol...so today I had a 3 oz pork chop and 3 oz of chicken thigh for breakfast, 3 scrambled eggs for lunch, 5 ounces of apple (that is my big splurge), an ounce of cheese, 2 Simms beef snack sticks, and a serving of pork rinds with a little butter (like buttered popcorn) and we still haven't had supper. I consider this a win though, as I didn't eat anything that I shouldn't with the exception of the apple, and I have been eating some apple a couple of times a week anyway. I have had 72 ounces of water so far and 2 cups of coffee. We are rotisserizing a bottom round roast for dinner, with salad, green beans, and cauliflower. I will probably exceed my 30 net carbs for the day, but I am okay with that...none of the carbs were the bad kind, and I refuse to beat myself up over it.

As for the snow...we have about 13 inches on the ground as of 7 pm, and it is supposed to continue snowing off and on for the rest of the night and part of Monday. They are expecting another 2 inches on top of what we have overnight, so it looks like we will end up with about 15 inches of snow, our largest snowfall this year, actually for several years. It is definitely the record for snow fall this late in the year! I have been taking pictures all day, and posted them on Facebook, but I did them with Instagram (my new favorite app!!) and I have yet to figure out how to get them from Instagram to here. If any of my tech saavy buddies can enlighten me, it would be most appreciated. :)

We went to mom's yesterday after dropping off the coffee and cookie supplies for church this morning, on the chance that we wouldn't be able to make it there. Good thing too...we got up at 7:45, and there was a dusting, so we thought "Well, we'll give it a try."...by 8:30 there was an inch and a half and it was snowing to beat the band! So we went nowhere. I called one of my friends, Tonya, and she took care of putting it out on the trays for me. Thank goodness for good friends and sisters in Christ! But I digress...so on our way home last night Dan and I were discussing what sounded good for dinner. We talked about Chinese food, but it is just too carb loaded, so we thought maybe make homemade. That led to "What about a low carb chicken pot pie? We have Carbquik...and we also have a Chayote squash to use in lieu of potato. But we have no carrots. Darn." After some discussion we decided that we would stop at ALDi's, having already been to the crazy house (Kroger) earlier in the day, and not being in the mood to battle the people and lines at Wally World. So we hit Tractor Supply for cat food, ALDi's for carrots, and then headed home, to begin preparing this chicken pot pie, not sure what it would be like. It was FANTASTIC!! It has about 4 net carbs per serving, is chock full of chicken, green beans, peas, celery, carrots, chayote squash, onion, cream sauce, and topped with a nice crust. This along with a salad was the perfect comfort food meal for a Saturday evening, waiting on the snow, and watching boxing. I entered the recipe sans directions in my cookbook, and when I finish the final edit, I will share it with anyone who would like.

I seen on the news this morning a part of New York state got 2 feet of snow and they were expecting more. I'm thinking this must be part of that storm. Glad you are home and safe. What is in your low carb crust? I'm not really doing low carb but I know that flour really does up the calories and do try to keep them under control.

Hey Stef, that chicken pot pie sounds awesome! I have so many low carb flours here, I need to learn to make my own crust. Please do send me your recipe. I would love to know you made it. WOW, you got the snow! It's been snowing here like mad... and it wasn't expected until tomorrow. Now I see the forecast is all the way through Wednesday. WOW!

Aren't you smart for thinking of taking the coffee/cookies to church a day early? And I did see that Missouri got blasted again by Ol' Man Winter. You have had a lot recently. Your chicken pot pie sounds wonderful, true comfort food and no guilt. Are you friends with a woman called Bella here? Her most recent journal is a 'must read' for us, it's all about lighting up our heart - so timely (for me). Hope today is a great day for you sis.

OOOh bless your heart on getting all that snow..you know we watched it here yesterday but we only got 3 1/2 so far..It was coming down with flakes a big as fifty cent pieces..Today its blowing snow and drifting UGH...Stay warm and enjoy that pot pie..Love those..Have a great day my dear friend...Love and Hugs...:O)

FOL, this storm was a doozie! I love winter and the snow, and I know that this is going to be great for the garden! Now for the warm up and getting in there to till the ground. I use Carbquik. I posted the recipe on my next journal entry. Hope you have a great week!

Sandy, I posted the recipe on my next journal entry. I used Carbquik for the crust. It was really good. Our snow is melting now, and we have a giant muddy, flooded mess in our front yard. YUCK...hope you don't get to much snow! Have a great week!

That is sooooo crazy, Stef. Do you still have snow? I guess I shouldn't complain at all. Isnt that the way with FS? Someone always has it worse.
