I wish I could help you with the recipies but I don't have any sorry. Pictures can also add weight on to you so don't go trusting it completely. I thinly slice zuchinni or yellow squash (or both). Saute a small chopped onion until lightly carmelized then add a few sliced mushrooms. Saute a little longer then add the squash slices. Now you can eat it that way if you like or in the morning I will add a beaten egg to the mixture for a hearty filling breakfast. A sprinkle of parmesan over the egg one is yummmmm. :)

I have a recipe that calles for garlic and rosemary and a sprinkling of EVOO. I cubed it and baked it with the flavorings and it was delicious. You can do that with any winter squash or vegetable mixture. :)

I love ratatouille, sprinkled with a little very soft goat cheese and baked or broiled until the cheese is bubbly-so good! I make ratatouille my way (no peppers!), using different squash-not butternut (zucchini, summer, yellow, etc), eggplant, tomatoes (canned plum), a dash of oil for sauteing the onions and garlic. I'll add whatever herbs I have on hand. I have a huge bag of herbs de Provence, so that is what I usually use. It's delicious!

I almost always just peel and steam squash. Then I add some EVOO and sea salt. Easy but delicious.

I do zucchini stuffed- slice lengthwise and leave a 1/2 thick shell and scoop center- in pan heat with pam, chopp mushrooms, onions, your scooped squash and chopped tomatoes garlic any other veggie- ground turkey, turkey or soy sausage or just leave it all veggies, mix, fill the shells spinkle with parmasean and bake at 350-yum!!

dang...those sound really good. I make zucchini and yellow squash similar to dawn, but I add olive oil, onion, garlic and a tad of butter while it's cooking. Also I have recently quartered my zucchini and roasted them with some sea salt and olive oil in the oven @ 400 degrees. I've also done the stuffed zucchini and it's delish!!

I usually roast it, or make zucchini boats (stuffed), or just saute it with garlic & onion, but I just LOVE so many of these ideas. Thank you so much everyone! I will post as I make them.
