Curry cucumber lamb



For 1/4 serving: 2.25g net carbs
Ingredients
•1 lb ground lamb (or any meat)
•4 cloves garlic, peeled and chopped
•1 tbs olive oil
•2 tbs curry powder
•1 1/2 tsp salt
•1 tsp cracked black pepper
•2 cups chopped cucumber
•2 eggs
Directions


Add olive oil, garlic, and meat to a pan and brown meat, stirring often, on medium-high. While meat is browning, add spices. After meat has browned, add cucumbers and eggs to pan. If you have the time, crack the eggs in holes you create in the meat, put a lid on it, and cook on low for 25 minutes or until eggs have hardened. If you're hungry and short on time, turn up the heat to high and scramble the eggs around with the meat, put a lid on it, and stir occasionally. Serve when eggs are cooked through. A dollop of yogurt, if you're willing to risk the carbs, goes quite deliciously with this dish.

Total Carbs: 2.5 g

Fiber: 0.25 g

Net carbs: 2.25 g
