"Authorities" -- from medical doctors to chiropractors to body-building YouTube salesmen -- argue both sides of this argument. Sheesh! I go back and forth, depending on how "low-carb" I can actually go on a given day. ;)

Today, I'm experimenting. I tested my blood sugar before eating my lunch of bacon and avocado. I scooped out 184g of Hass avocado and divided it in half. Stats for 92g of Hass avocado:
-- 7.83g total carbs
-- 5.9g fiber (NOTE: no distinction between "soluble" and "insoluble")
-- 1.96g net carbs
-- 1.96g protein
-- 13.71g fat
-- 147 calories

Avocados turn black so quickly, but eating a whole one isn't part of my plan today. Even refrigeration doesn't help, but I heard that covering avocado in lemon juice does. (I have succeeded keeping sliced apple from turning brown by laying them out flat and brushing the exposed surface with lemon juice.)

So, I mashed the other half (92g) of the avocado, spread it evenly in a small bowl, and covered the surface with lemon juice.

I took no Humalog (insulin) before the meal. In two hours, I'll know how the combination of bacon-and-avocado fat and protein mitigated the blood sugar effect of that 7.83g avocado carbs. We'll know tomorrow if the lemon juice treatment works.

Dr. Berry has a newer youtube video tackling this topic. His advice was: packaged labeled foods, count total carbs - non packaged unlabeled foods (whole foods), count net carbs. Best wishes on your experiment & findings!

Is there a measurable difference between the blood sugar effect of 8 grams of carbs versus 2 grams of carbs for you?

I am not a diabetic (however family members are so...) but because of @MillaLite I just bought a glucometer to track my blood sugar because I take in carbs even when fasting (even Miso soup has carbs). I plan to experiment and track my results also...

Cjodyssey, that's what I'm trying to determine, as a type 2 diabetic and use a sliding scale to dose Humalog before a meal. I've always counted total carbs for that purpose. But, since beginning LCHF/keto, I want to test the "conventional wisdom." I'll let you know!

I've mashed up avocado, put it in a container, then laid a layer of Saran Wrap tight over the top, touching the avocado. Press in firmly so there are no air holes and it seems to work really well!

You might also do a trial of two things that have the same carb count but vastly different levels of fiber, say something with 10 carbs and no fiber versus something with 10 carbs and half or more of them are fiber. I'm insulin resistant and have no idea how many carbs it takes to spoiler my insulin. I have so much of it in my blood anyway so i don't even know if it matters.

In addition to the saran wrap suggestion of socalpam's i have heard if you put the pit back in with it to store it, that helps. Idk if that is a myth though...

I've done my insulin:carb ratio, so I know that I need about four units of Humalog to cover 10g carbohydrate. The fat and protein in a food also affect the rate of carb absorption and conversion to glucose. Freezing after cutting them into 1/2 or a 1/4 sizes. I have seen them sold this way also.

For me, i leave half avocado in shell, plastic wrap and refrigerate cut side down. Next day there may be a bit of brown on the surface but i just scrape that layer off, then spoon out and enjoy. Or, scoop out the whole thing, mash with a tablespoon of mayonnaise, a squirt of lemon or lime juice and I have instant guacamole! I reuse plastic containers with lids for refrigerated storage but it don’t last long. Perfect for topping salads, tacos or dipping veggies.

Leave the seed in the half of the avocado you want to save and put in cellophane wrapped tightly.

Regarding the blood sugar response, my BS rose only 10 mg/dL two hours after ingesting 8.48g total (2.61g net) carbohydrate, a verynormal result, for anyone -- and without taking insulin before the meal.

pour water over guacamole just enough to cover. refrigerate. Next day drain water. Guacamole looks and taste just like you made it the day before

About a decade ago, I was diagnosed with T2D and started a low carb/low fat diet with physician approval. She agreed not to bug me about taking drugs if I kept my bg within the normal range. The LCHF diet I started last year does that for me better than anything else I have tried. Your experiment interests me! Please continue posting about it. Last week, my A1c was 5.4%, but early morning bg is usually over 100 mg/dl. My brother-in-law, a medical professional, argues that this A1c proves that I was never really diabetic in the first place. Heaven forbid that something works without chemicals! Some people cannot stand evidence that contradicts their dearly held beliefs.

Moogiemynes, 5.4% A1c = 108 mg/dL average serum glucose. That's considered "pre-diabetic" these days, but pretty low-level.

I love avocado! I eat mine in fifths. I slice it out of the shell, rhen put the shells back together, wrap with saran wrap, and then with foil. It keeps very weel, and is fresh each day.

Moogiemynes, elevated morning (fasting) serum glucose is called the "dawn phenomenon." The liver sometimes recognizes the overnight "fast" as "starvation." It responds by converting stores glycogen to glucose and releases the glucose into the biliary system for digestion in the small intestine and quick release into the blood. To avoid this morning elevation, you might consider a late small snack of protein and fat (no carbohydrate). An example: half a stick of Galbani string cheese (full-fat mozzarella, no fillers) -- 7g protein, 7g fat, 0g carbohydrate, 90 calories). Eliminating "dawn phenomenon," if it occurs frequently, might be all you would need to bring your average BS below 100 mg/dL and A1c under 5.0%.
