I love these! I salt my shredded zukes with garlic or onion salt and then I let that mixture sit for 15 minutes before I squeeze out as much moisture as possible. Then I beat the zukes with egg and parmesan and then I fry the patties in 1 TBL of oil and 1 TBL of butter. By using the onion salt I ommit the onions and save some carbs.

I was quite excited about this recipe when I read it too but it was a disaster for me I used evoo and hand shreded it and of course it was no where near patties. The eggs cooked and it was more like scrambled eggs sprinkled with zucchni. I think to make it work out the zucchni has to be more that just shredded and be put in a food proccessor then the egg and then this might work

I would add a tad bit of parmesan to this. Yum! Oh, and substitute 2T EVOO for the vegetable oil.

These were simple and delicious. I have a couple suggestions though :) 1) the zucchini needs to be dried with paper towels after being shredded and 2) don't salt or pepper until they after they are cooked (otherwise the combination is too watery). Also, they should be flattened out and cooked on medium high heat for about 2-3 minutes per side. I used about 2 tablespoons of Ex.Vir.Olive Oil. Great recipe... thanks for sharing :)

these sound good, but is so much oil necessary? Wouldn't 2 tbs be enough?
