Roasted Butternut Squash with Rosemary & Balsamic
A very satisfying recipe that you can serve for Thanksgiving.
Ingredients
Directions
- Preheat oven to 400 °F (200 °C).
- Toss squash cubes with olive oil, balsamic vinegar, and rosemary. Put on cookie sheet or dish large enough to hold it in a single layer.
- Roast until squash is very soft and starting to get slightly caramelized.
- Note: No one will know how healthy this recipe is but you!

I absolutely loveeee this and could eat the whole dang squash!! I don't add salt to avoid the extra sodium and the vinegar seems to be plenty enough flavor for me. :) I highly recommend it!! AND it's a low glycemic index food, so GO FOR IT! :)

This dish is a TREAT to me! Taste sweet and buttery. Once out of the oven, you're supposed to add another 1taspoon of balsamic and mix it up. I have done this both ways. My husband likes it without the last added teaspoon. I like it both ways. I hope it helps those people who are having the sweet & buttery dish withdrawls!
