- Preheat oven to 350 °F (175 °C) Spray bottom of muffin tins with non-stick cooking spray.
- Combine oat bran, brown sugar, baking powder, salt, cinnamon, nutmeg and allspice in one bowl.
- Mix together milk, egg and honey; add milk and egg mixture to oat bran mixture and stir until moistened.
- Add grated apple, carrot and pecans.
- Fill muffin cups 1/2 to 2/3 full.
- Bake at 350 °F for 15 to 17 minutes. Tops will brown only slightly.

Reviews
There is a major ingredient missing from this recipe to ensure it bakes properly - flour. I spent a fair amount of time prepping the ingredients, but what I ended up with a very runny (almost watery) batter. I went ahead and baked them anyway - they do not rise and even after cooling the consistency is like slightly set up mush - I began looking at other recipes for "bran" muffins and saw that they generally add equal amounts of bran AND some type of flour. We tried to eat them anyway, but it was not pleasant. Wasted a lot of time and ingredients for something I ended up throwing away.
