Cauliflower based dish that's better than rice with less carbs.
Ingredients
Directions
- Place 1 to 2" of water in the bottom of a pan with a steaming basket.
- Bring water to a boil and steam cauliflower untill tender.
- Remove cauliflower from stove and place in a food processor and add pulse until crumbly looking.
- Stir in a tablespoon of butter and use like you would rice.

I cook cauliflower rice at home, but I do it a little differently. I break half a cauli into florets and I put in a microwave safe dish with a lid, with NO water and I put it on high for about 3.5 minutes. Once it is cooked through - I blitz it in my little hand food processor and that it is, no butter or marg. Great with curries :)

Perhaps, omitting the butter (which is a NO NO -animal fat) and substitute Low Calorie/Low fat mayonnaise or salad dressing.
