Leek, Broccoli & Cauliflower Soup
A versatile leek soup that you can be creative with and add your favorite vegetables.
Ingredients
Directions
- Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.
- Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.
- Add chicken (or vegetable) broth, plus 2 cups of water to the pot.
Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!
- Bring to a boil, then simmer for 45 minutes.

For a twist you can roast the veggies instead of sauteing them.

you are not allowed peas or carrots or milk on induction! I would not recommend eating this on atkins induction unless you omit the peas and carrots and milk!

I really enjoyed the flavor of this soup and it's easy to make too. The last line of item 3 should be at the end of item 4; "Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!" You puree it after simmering 45 minutes.
