Fettuccine with Light Alfredo Sauce
A lighter version of a favorite pasta dish.
Ingredients
Directions
- In saucepan melt the butter.
- Add minced garlic cloves; cook over low heat 1 minute.
- Whisk in 3 flour, then whisk in fat free half-and-half until well combined.
- Finally, whisk in salt, pepper and nutmeg, and bring to boil, whisking frequently.
- Reduce heat and simmer 5 minutes or until thick.
- Remove from heat and stir in grated parmesan cheese.
- Serve over cooked fettuccine.

Reviews
To me, the sauce was similar in taste to to that of Lean Cuisine's Fettuccine Alfredo dish, so it was ok, but not great. I may use less flour and maybe more garlic next time to give it better flavor.
