A great and versatile scone recipe.
Ingredients
Directions
- Whisk together flour, sugar, baking powder and salt. Cut in butter.
- Stir in orange juice and chocolate chips.
- Roll into a 9" circle (approx. 1/2" thick). Then cut into about 10 triangles.
- Place on greased baking sheet. Bake at 400° F (200° C) for approximately 12 minutes.
- Note: instead of using chocolate chips and orange juice, you could make them plain or with raisins and apple juice, or cranberries and orange juice.

Half of the ingredients listed are not Phase 1 friendly that I wouldn't even consider it. May be a treat every now and then when on Phase 2.

I'd substitue margarine or some lower fat spread in stead of butter, and might put in dark choc. chips or carob chips instead. :)
