I made this for dinner tonight and it was yummy! I loved the taste and the water chestnuts provided a nice texture. I wasn't sure if the rice was supposed to be pre-cooked or not, but I used a box of Uncle Ben's long grain and wild rice and cooked it prior to adding it to the casserole. My husband asked for a little less mayonnaise next time and I think I would add some Mrs. Dash or some other spices (I used the George Foreman grill for the chicken). This recipe was quick and easy to make. I even added some crushed up Ritz crackers before a topping. Could make casserole the night before and just throw into the oven!

This is one of my favorite casseroles. My guests always rave when I make it. I like to serve it with a salad and wheat rolls. 6 points for a great casserole is not bad.
