Made these again last night. Used 9 peppers instead of 6 with the same amount of cream cheese the recipe calls for, but I did increase the shredded cheese to 1/2 cup (I used Mexican blend) and I added 1/4 cup mozzarella. These are just awesome. I could have eaten all of them myself.

My husband and I absolutely loved these. I actually made way more and put them in the freezer. When ever we want a few I pull them out and put them in the oven. Thanks for sharing!!!

I make these alllll the time!!! Literally once a week!
I love them because they are so good and you can make variations to the cream cheese mixture depending on your taste (or mood!)
I'm on extended quasi-induction and while I don't typically track these (too many ingredients and I change it up too often to save a recipe) I consider them safe for induction in moderation.

Really like these for low carb snacking. Only tip I have would be to use center-cut bacon and par-cook it before you wrap the peppers so that they really crisp up in the oven.

These were great. Just what I needed to add a few carbs at the end of the day. I love this diet.

These are my go-to Atkins snack if we're going to a get-together. Problem is - everyone else likes em so much, I'm lucky if I get any! :-)
