I finished my canning for the night. I got 5 jars of chicken, 5 of pork, 8 keto beef veggie soups, and 6 sausages. Operation clean out the freezer is well under way. In the next few days it will be canning turkey and dehydrating potatoes (for hubby and son), mushrooms, and making zucchini slices (that's not for storage but snacks for me). I think I have 3 or 4 turkeys left. I have to check. I had 9 jars of soup but one wouldn't have sealed so I just ate it for dinner. It came out really good. It was beef, cabbage, turnips, a tiny bit of carrots, and a little more stuff in it. Now I don't have to make a big pot of soup when I just want 1 serving. I am almost out of jars and can't find any near me though. I have to look though my carport and see if I have any hidden cases or hit up fb marketplace to see if anyone near me is selling at a decent (not gouging) price. I have a few boxes of lids left so I should be okay there. And no, I haven't cleaned my jars off yet. A quick vinegar wipe tomorrow will be fine.

Wow! That is totally impressive! You have a skill that is lost to many of us. I remember my mom canning so much, but I would have zero clue how.

Thank you. Not skill but many, many youtube videos on how to can. I had a canner many years ago that I got rid of because I was afraid to use it. The newer ones are much safer so I tried again. The first time I canned water to test it out and make sure I was doing it right. It also let me find the right temp on the dial for that "sweet" spot of high enough to keep pressure and low enough not to boil it dry. I tried that a few times to make sure I was doing it right.
