I use 2 eggs, 1Tbs almond or hazelnut flour, 1 tsp coconut flour, 1/4 C shredded cheese, 1/4 tsp baking powder and either 1Tbs Cafix or 1Tbs. cocoa powder and a sprinkle of cinnamon, and a dash of stevia. The cafix gives it a more interesting color and flavor. You can also mix both cafix and cocoa for a mocha hint. The coconut flour gives it a better texture. The batter should be flowing, but not doughy or liquid. If you're doing keto, watch the amount of syrup - I like Lakanto- as it has 6 gms carbs per Tbs. I've been playing around with this, and this is a pretty good recipe for my taste. It will make 2 mini waffles or one regular one.
