Mixed Purple and Short-Grain White Rice with Barley

A Korean-style mix of purple rice, short grain white rice, and some barley.

Directions

  1. Mix 1/4 cup purple rice, 1/4 cup pearled barley, and 1/2 cup short grain white rice together.
  2. Cook rice in a rice cooker, or your preferred method.
  3. Maangchi's (www.maangchi.com) method for cooking rice is: In a heavy bottomed pot, add [rice]. Rinse in cold water and drain. Scrub the wet rice with your hand. Rinse and drain until the water that is drained becomes clear. Drain the last of the water by tilting the pot as much as you can. The rice should still be wet. Add 1 cup of water and soak in the pot for 30 minutes with the lid closed. Bring it to a boil over medium high heat and let it cook for about 7-8 minutes. Open the lid and turn over the rice with a spoon.
