Egg Omelet with Tomato, Zucchini, Chedder Cheese and Feta Cheese

3 eggs, 1/2 cup of zucchine, 1/2 cup of diced tomato's, 1 tblsp of feta cheese, 1 tblsp of chedder cheese. 2. Beat 3 eggs and cook in a non-stick pan with olive oil

  1. 1. lightly sauté zucchini and tomatoe in olive oil with some dried onion and garlic in a sauté pan lightly coated with olive oil . Sauté to desired tenderness.
  2. Beat 3 eggs and pour into into a non stick pan lightly coated with olive oil. cook on medium heat until egg is fully cooked on top. There should be almost no raw egg or wet egg showing. Don't try and flip or the egg will fall apart.
  3. Put the sautéed zucchini and tomato in the middle of the egg in along with the feta and cheddar cheese and carefully fold the over the top. Let cook on medium to low heat until cheese begins to melt and the egg is fully cooked.
