Well, it's another Frittata Friday, and today's creation will be my version of a pizza frittata, which I call: Za! Frittata! It'll be loaded with hot turkey Italian sausage, pepperoni, mushrooms, bacon bits, spinach, shallots, roasted red bell pepper, garlic, four kinds of cheese, and a tasty basil pesto. Who needs pizza when you can have a Za! Frittata!; well at least for now anyway. Soup-er Saturday coming up, and it's gonna be tasty! :-)
WOW!!! It came out the oven looking and smelling like a small deep dish pizza. The taste; like a deep dish pizza, minus the crust, which is delicious!!! I can't think of anything I could have done to make this better, and still keep it low carb. :-)

This is the first week beyond the challenge I was participating in, and the beat goes on. I'll be keeping track of my average net carbs, each week, and weighing in once a week. My total net carbs were 136.86g, with a daily average of 19.55g per day. I must be doing something right as I'm down another 5 pounds. Hoo Yaa!!! And thank you Jesus!!! I want to stay strong in what I'm doing, and keep the weight coming off. Incidentally, I managed to avoid the temptation of a feast of fried chicken, while at church tonight, and though it wasn't easy, I know in the long run, it will be worth it

Okay, so it's only Monday, but I'm already thinking towards the weekend. With Frittata Friday coming, I've come up with an idea for my next frittata, and it serves two purposes. For a while, before I decided to get back on track with my low carb eating, I was eating pizza every Friday, which didn't bode well for my weight history, or my health. But I'm a pizza freak, and that's how I rationalized what I was doing. Getting to the point; I can satisfy my desire for pizza, and stay true to Frittata Friday, by making what I call a "Za! Frittata!" It will contain many of the elements of a great pizza, but still be a frittata: Italian sausage, pepperoni, mushrooms, spinach, a bit of pesto sauce, alfredo sauce, and some feta cheese; low carb and great pizza flavor to the max. I'll also be making my version of Chicken Zoodle Soup, for Soup-er Saturday. It's planning ahead that helps me to stay on track, and not miss some of my favorite high carb foods. Well, as I said yesterday, this is Soup-er Saturday, and though I had plans to make an interesting and well thought out soup, I had my lunch very late in the day, so I won't be making it, at least not today. Instead, I'll just heat up some chicken broth, and that will suffice for today. I guess I'll have to make my soup tomorrow, but it's well worth the wait. :-)

Well, it's another Frittata Friday, and today I'm going to keep it as simple as possible. Today's frittata will contain pan grilled ham steak, chunks of zucchini, shallots, and some sharp cheddar cheese; simple but delicious. :-) I also, finally, came up with a great name for the soups I plan to start making on Saturdays: Since I'm already having "Frittata Fridays", I guess "Soup-er Saturdays", will be a nice addition to my week. Ta dahh! :-) It will be the same premise as for my frittatas; fresh or, leftover meats and vegetables turned into a soup with chicken, beef or vegetable broth, as the base, along with herbs and/or spices to make sure it tastes good. As said, last week, the possibilities are endless.
