That's another few ounces I don't have to schlep with me 13.1 miles, Folks! Finished yesterday's training run feeling fabulous! Today is a rest day from running, so I'll probably just bounce around on the rebounder to silly, fun pop music for a while to support my lymphatic system and maybe do some yoga later for some "active recovery".
I have some news for you too: I just registered for an 8.2 mile race this weekend! Yippee! It's a flat course around a lake here, so it should be a beautiful run. According to my training plan, I'm supposed to run in a 10K (6.2 miles) this Saturday to help prepare for the half-marathon 3 weeks later. But, there aren't any 10K's anywhere near me this weekend; a ton of 5K's, but no 10K's, sadly. I'll have to settle for this 8.2 mile race instead. I've been running at least 8 miles in my training runs, so I know it won't be a big deal. I just have to learn race pacing so I don't take off like a gazelle and end up completely burned out by mile 5!
Food wise, I've been cleaning out my fridge and turning all the leftover veggies into lacto-fermented deliciousness! I have 6 large quart-sized canning jars of bubbling, fermenting probiotic veggies on my countertop that I can't WAIT to devour! It's just about the easiest and most nutritious way to preserve veggies and get a ton of great probiotics without the need for dairy. I love 'em!
OK, Folks... I better get a move on if I'm going to tackle this to-do list!

Oh yes. I used to teach microbiology labs at a university a while back and know how important it is to keep our personal microflora in balance! Especially since they outnumber our human cells 10 to 1! The role they play in our health shouldn't be overlooked.

Great job on your exercise! Where did you learn how to ferment your veggies? I would like to read how to do that!

Have you ever had any troubles with a batch going bad? I've worked in restaurants all my life and this goes against everything they tell you. My brain is screaming at me, but then this is probably part of the reason there are super bugs and we all get sick all the time now. Then again I love sauerkraut. I'm a total germophobe and I'm in a 12 step program right now to try and get over it.

No, Instant. I've never had a batch go bad. You're essentially just culturing the good bacteria that are already present on the vegetables. This process has been used for thousands of years to preserve vegetables. It keeps food from going bad for many months and it's delicious and nutritious! I was recently cleaning out my fridge and found a small jar of fermented veggies I made in January and they are still good! In fact, they were even more delicious than when I finished fermenting them!

i think 8.2 miles is longer than a 10K. so you should be fine. keep up the good work! i love seeing your progress.
