Eating more always makes the weight go back up.No surprise really.
256.5 lb Lost so far: 12.5 lb.    Still to go: 41.5 lb.    Diet followed reasonably well.
gaining 4.9 lb a week

Me too. I cycle calories between lifting and non lifting days. I've seen that fluctuation as well.

It's after the the non lifting days that always get me putting some weight back on.Especially if I am not keeping busy.I lift in the evening and I'm always very hungry the day after I hit the gym.
