well... husband is going to be traveling for work on Wednesday. so he wanted a pizza night... we got a Chicago style pizza... I had toppings then a third of one peice worth of the dough but i ripped the crust off... so considering the circumstances I didn't do too bad. . not my first choice of foods .... I was trying to steer clear of cheese and breads... only had a little bread ... not happy about it... and I'm not too happy with my choice to eat cheese either. but with kids crying because dad is going out of town ... husband and I not to happy about it... and then the baby who has no idea that his best friend is leaving for 2.5 weeks.... I guess being perfect on the diet wasn't my first thought..... while he is gone I'll eat more fish (he hates fish) and what not to jump start myself again.... and it will give me time to start an exercise plan.... so I'll fill my time with that stuff.... we have delt with this before... it's not like the time he was gone for 9 months. just 2.5 weeks...

The longer I live, the more I realize there isn't ever a perfect solution, a perfect day, or a perfect diet. Life is happening all around us, and sometimes, you just gotta go with it, Chicago style even! Sounds like you made the best of it and you have a plan. Can't do any better than that, my friend!! Hang in there and let us know what kind of fish you're making. I love me some fish! Maybe trade some recipes?

thank you so much RkTkFx. you're a pretty understanding guy :D I don't cook much fish so I don't know what I'm doing lol I just figured I'd muddle something together ha ha so I'd like to hear your recipes!

If you have a mild fish (cod, orange roughy, tilapia, etc), I just bake it at like, 350 degrees for about 10-15 minutes (it should be flaky and white, not soft in the center) with a squirt of lemon juice, some garlic and/or chives, and salt and pepper to taste. Sometimes I'll add some other seasonings, like curry, cumin or paprika (LOVE smoked paprika) to liven things up. Then there's fish like salmon that is awesome baked, pan seared, grilled, or pretty much any way you can imagine. Same seasonings as above, but sometimes a little dill goes well too. If you want to get really adventurous, there's tuna steaks, shark, mahi mahi, etc. These are all great grilled (lemon, garlic, chives, splash of olive oil for lubrication (non-stick), salt and pepper). I dunno, that's all I got off the top of my head. The key to cooking all fish is not to overcook. Take a peak in the middle and see if it looks raw-ish. If not, it's done!
