Not gonna lie, very hard not jumping on the scale this morning (going to wait a week).
So after standing in the aisle at Publix for about 15 minutes studying every bottle of coconut oil, I bought the Spectrum expeller pressed non-gmo organic coconut oil. (Do we really need so many choices? No wonder we are anxiety ridden). I always try to support U.S. product but forget trying to find coconut oil from where I live (South Florida)! Had to settle for Phillipines/Sri Lanka. Fine, whatever...
Anyway, about the oil, I thought it would be more oily. It semi-solid, I put a TB in a smoothie and I was very surprised, it didn't have a taste, wasn't oily and was nice and crunchy. Very interesting. Thanks for suggesting it Rckc!

That may be what I need to get my fat up and protein down. Was thinking about a one day water fast tomorrow. Any advise? (Like don't bother lol)

I don't do fasts with just water, can't give up my coconut oil coffee. I think crunchy is weird for your oil, mine is real soft but solid. How about a fat fast for one day? Throw you into ketosis and get your fat intake up. I took a peek at your percentages and fat is mighty low for LCHF. Maybe cook your veggies in butter? Just some thoughts!

Just a little crunchy in the beginning, I mixed it with very cold unsweetened almond milk. I think the coconut oil should do the trick to up my fat? Fat fast? I like that!

Coconut Oil is solid at room temperature, and it will happily go from liquid back to solid as temps rise and fall if left on the counter. Either way it is still good to use....no worries.

coconut oil will melt when warm enough, at room temp it is solid and it got crunchy in the smoothie I assume because you had ice or frozen fruit in it. Coconut oil is a awesome thing!

Coconut oil has a very long shelf life and has the ability to harden (solid) become liquid without loosing any nutrients/composition. I use it to grease pans and cook in the skillet. It works great and leaves no after taste.
