MMMmmmm.... I love soup!!
I adore home made soup!! I had mad those wonderful crock pot chicken thighs and veggies the other day. I used 4 thighs, 4 drumsticks and 4 wings instead of all thighs. I added some curry and poultry seasoning, and a can of chicken broth. It was so yummy!!
The next day, I deboned the chicken, put it back in the pot, added some diced tomatoes, spinach, and some chopped cabbage, a little more cauliflower,some baby carrots, and a little can of tomato juice. Thats what I've been eating for the last few days.
I have a really nice piece of chuck roast in the freezer, and plan on making some beef veggie soup. my major problem is, when I make soup in the stock pot, I make the stock pot FULL!! I can't seem to get it smaller! Well, in comes my 3 1/2 quart crock pot. I'll make it in that!! Loads easier, put everything in it in the morning, and get ready to eat it for supper!! I think I like using the crock pot better. It cooks it slow, and it gives everything time to mingle the flavors!!
I have the other crock going right now with my garden green beans, and some ham. Thats going to be good too!!! I have to remember to go put in some onions too......
At least today I can move!! I can't believe it took until today to loosen up from monday's pt!! I'll be back there at 11 tomorrow!! I hope I'm not so beat up for the weekend!! Its suppose to be really nice, and it rained something fierce yesterday!
