Woke up early on my day off.
Holiday is coming up ~ went to a much needed hair appointment.
Came home to prep some proteins. 3 dishes total:
Mediterranean Pork loin ~ pre-seasoned, btw but I added sliced baby carrots, fingerling potatoes, shallots, marinated artichokes drizzles in evoo, oregano and fresh thyme.
Kung Pao Chicken ~ with red onion, bean sprouts, sliced baby carrots. The recipes called for peanuts but I had every other nut in this house besides peanuts.
Mediterranean Chicken ~ my own recipe. I'm slowly gaining confidence with creating my own with what I've learned so far LOL. I made my own Greek spice to season the chicken thighs: Coriander, Turmeric, Garlic powder, Onion powder, smoked Paprika, Oregano, Thyme, Kosher salt, Pepper, Cumin. Simmered with olives, artichokes, scallions, garlic cloves, canned diced tomatoes w/lime and cilantro.
Will freeze half of each dish since the holidays are coming up and more dishes will be made for festivities.
