Directions
- Preheat oven to 350 °F (175 °C).
- Cook bacon. While bacon is cooking dice potato and place on a cookie sheet in oven. Bake until soft or desire texture.
- Dice bacon and mix with potato in bowl. Whip eggs and milk together then add to bacon and potato.
- Pour mixture into muffin tins lined with paper baking cups for easy clean up.
- Bake for 30 minutes or until eggs are fully cooked.
