Directions
- Cook chicken breast in non-stick skillet with olive oil until chicken is fully cooked about 3-4 minutes.
- Remove chicken from pan and allow to cool.
- In a medium bowl add chicken and all other ingredients, mixing well.
- Refrigerate until cold enough to eat.

I made this salad with some leftover spinach parmesan chicken breast which added some nice flavor. I also used light mayo to cut the calories a little and added some spices to achieve a tasty salad that I put over some aragula leaves. Very good lunch to make for work.
