Chicken Tortilla Casserole
My kids love this wonderful dish.
Ingredients
Directions
- Cook chicken breast and shred after cool to touch.
- Slice tortillas into strips.
- Mix chicken breast, black beans, soup, salsa and chilis.
- Place 1/2 of tortillas in a casserole dish that has been sprayed with cooking spray like Pam.
- Layer next with chicken breast mixture and then 1/2 of the shredded cheese.
- Cover with other half of tortillas, then chicken breast mixture and then cheese.
- Cover and bake in 350 °F (175 °C) oven for 45 minutes.

Sounded delicious until I looked at the Nutritional Facts. I would not be able to eat this.

You can make this have less calories by using fat free cheese and cream of chicken soup. It can have whole wheat tortillas. I wanted to see the calorie count the way I made it that day and I have to admit, there are a lot. You could also have a smaller serving size.
