Curious about fried vegetable snacks
A friend suggested fried, dehydrated, vegetable snacks as a easy more healthy way to satisfy my salty snack cravings. I bought some and now I am addicted. They sound gross but are some of the best tasting snacks I have ever had. Whole foods has all natural Veggie Beans (Fried Green Beans) and you can also get
fried peas online
.
I was curious though whether this is a South Beach friendly snack. Vegetables and oil are definitely on the friendly list but what about the process of frying. Any thoughts would be helpful.

What can I EAT? Phase 1
I find that quiche cups are the way to go, but I also found this amazing recipe for quick poached eggs which I add to a handful of baby spinach and top with mustard or olive oil and pinch of black pepper. I keep this in my work frig so it works out well.
Fill a 1-quart microwave safe bowl 1/2 full with water. Crack two eggs into it and poke a hole in the yolks with a skewer or toothpick. Microwave on high for 1 to 1 1/2 minutes until the whites are set and the yolks are still soft. Remove from the oven and set aside.
Enjoy.
