CSA challenge: Carrots, Kale, Fennel, Spring Onion
I would make a "winter blend," stir-fry of the veggies with a little olive oil. Optional-add a little stripped chicken or beef for protein. Make a sauce of 1/4 c. soy, 1 tsp. peanut butter, 1 chopped garlic cloves, half a tsp. red chili flake, 1/4 c. rice wine vinegar and blend until smooth. Prepare a package of Asian noodles like lo mein, and toss with veggies. Pour sauce over top, blend thoroughly, and serve. Avocado slices, lime wedge, and cilantro sprig over the top would give visual appeal and make you like super-awesome, healthy, home chef.
