I don't think a little granola will inhibit weight loss. But when you do low carb than add some carbs back in, the body takes in water from the carb (whatever it may be), so it may initially mask any weight loss you have. As you finish your weight loss (one pound-go you), you will need to start adding them back in slowly till you find the right balance that works for you and lets you maintain. Lack of sleep can also affect the scale.
