I never attend to cooking class or whatsoever, but I think eating out is good lesson for me. The white round things in the second picture is Daikon radish. The square ones are Koya-Tofu (it is dried tofu. Before you cook, put them in the water to make soft for a while. It is like sponge.)
I try to prepare dinner for mixing the ingredients as below and have rainbow color as much as possible.
- Beans (plant protein)
- Nuts/Seeds (good oil including avocado)
- Sea weeds (soluble fiber)
- Leafy vegetable (vitamin)
- Fishes (omega 3), Meat (B vitamin)
- Fungus (vitamin, fiber)
- Root vegetables (insoluble fiber, vitamin)
- Fermented foods (gut health)
