Cooking adventures: today I made pizza crust with zucchini, mozzarella, and cauliflower rice. Made some "naan" too and then baked pepperoni and more cheese on top for dinner. The eggplant came out badly but I peeled off the burnt part and ate the remainder which was sadly undercooked. Luckily I am not picky. Decided to skip the calculations for now, maybe will catch up later in the week for the weekend, but I am going semi-vegetarian so I feel like I am eating pretty healthy for the next couple of days. I would call myself partly vegetarian too. I don't eat meat often and am not crazy about fish. Most of my protein is from dairy. Fat free milk and string cheese.

@debberdooo I was winging it based on recipes I found on line: Shredded two smallish zucchini, added one medium egg and 1/4 cup breadcrumbs, about 3/4 cup of shredded lowfat mozzarella, then added a 1-cup package of cauliflower rice. Mashed it around with my hands and formed little pizza shaped things as well as flat naan shaped things. Baked 20 minutes at 400 deg F and flipped them and backed until browned. Whatever cheese you use will add flavor but I didn't even add extra salt and pepper which was in the recipe.
