Well, after I last wrote, I DID eat that oatmeal. (Had a nice BM afterward.) I had to go pick up my grandson, and ate the naval orange when I got home. For lunch, I picked up Cracker Barrel. We had three $25 gift certificates from Christmas and my husband's birthday. I got the Chicken Fried Chicken (two whole boneless breasts, battered and fried - I shared with my 5-year-old grandson and he liked it so much that he ate a whole breast). I also had carrots, green beans and mashed potatoes (which I forgot to put on my plate). Afterward, I ate one of the biscuits with butter. This morning,
I made a Keto Cheesecake in the Instant Pot. It uses ground almonds and butter for the crust and uses Swerve for the sweetener. Haven't tried it yet, but I hope it will be good. It is high in calories, but very reasonable in carbs. Since I'm OFF Keto for the moment, I may have some cherry pie filling on top of my piece tonight when we try it.
I don't have any idea what I'm going to do for the rest of the week. I'm supposed to start a Keto Challenge (from Keto-Curious to Keto-Confident) next Monday. I'm considering canceling my enrollment in the 21-day program. Gotta wait until I'm not in a frustrated state to make that decision. Right now, I'm mad at keto! We're not on speaking terms.
