I made an awesome soup Monday evening using random things we had available at home because I didnt want to go to the store. It turnd out so good I added it to my FS cook book. It's low carb, high fat goodness. To get the carbs even lower you can leave out the tomatoes, but have to have them!

Here is the recipe, let me know what you think if you try it. One serving is about 1.5 cups and this recipe makes 12 servings.

I love soup of the day...:O)..I made baked cabbage with slices of onion and potatoes...put it all in a long pan and cover with foil...bake at 400 degrees for 45 minutes and then uncovered for 45 minutes..you can leave out the potatoes if starch is a problem...DH loves it...:O)

That does sound good - I love those kind of soups .. I call it 'clean the fridge soup' or 'kitchen sink soup' .. I usually make a pot of soup once a week and keep it for quick hunger solvers when I'm in a hurry.
