This made 2 generous servings or could be 4 servings with a side salad. I used 1 1/2 links of leftover sausage. I eat pasta occasionally and when I do I only cook enough for 2 servings (1 each) for hubby & I. No temptation to eat more.

Amy, I don't use an actual recipe.I think I tweak it every time I make it. This time I cut 1 whole red sweet pepper, 1 third onion, 1 1/2 previously cooked Italian sausage in chunks. Sauté in 2 tblsp. Butter. Add generous amount of minced garlic. Sauté til veggies are soft. Add Italian seasoning & red pepper flakes. In the summer I use fresh basil, oregano, etc from my herb garden. Season with black pepper & salt to taste. Add 2 cups chicken broth & bring to slow boil. Add 4 oz. Pasta & simmer til tender. I stirred in 1 tblsp. Heavy cream this time. Add parmesan. I used almost a quarter cup saving enough to sprinkle some on top before serving.

Oops! I left out the tomatoes. Add them with peppers, etc. I used about 20 cherry tomatoes. I have made it with more tomatoes & no sweet peppers. You can substitute lemon juice instead of heavy cream for a more lemony flavor....nice with shrimp.
