A friend gave me 20 beautiful pomegranates today so prepped them all and put in the freezer. Incredible delicious when mixed with my lunchtime yogurt and blueberries. They are quite high in carbs because the juice is so wonderfully sweet but their nutritional and medicinal value is astonishing— not to mention just plain old good eats.

Do you like to incorporate them into your salads for a crunchy texture? I think they would be a good substitute for sunflower seeds, if allowed in one's macros.

Oh what an awesome gift! I bought two for a special treat form my hubby and I for a little get away we have next week. I can't wait. Do you have a special knack for getting all the fruit released from their stubborn clinging together? I've seen a few like halving them and smacking their backsides with a with a wooden spoon and the seeds fall out? For just a single fruit, half the enjoyment for me is slowly nibbling, but I imagine 20 would be a bit of work!

Never had fresh pomegranates before. Going to keep an eye out. :0) If I have some it will have to be my main potassium source for the day. Yogurt, mmm

My friend uses a colander submerged in water. She just cuts them in half and half again and easily extracts the seeds under water. The white pith floats to the surface and the seeds sink. It worked out perfect because that juice will stain.. she skimmed off the floating pith and drained the colander. I allowed them to drain well, put the seeds of just two (a lot of seeds) in a baggie and put in the freezer flattened so it wouldn’t take up so much room. Took me about 2 hours to do them all. 10 baggies. She has probably way over 100 fruits still on the tree. I will go get some more before the season ends. She takes the ones that don’t get eaten and just leaves them outside in a shady, well ventilated place and they make a beautiful item to make a wreath with or put in a bowl at Christmas the next year. It will now be kumquat season soon and I have friends with that fruit as well.. Last year I made about a dozen jars of jam— not “canned” but freezer jam. So good. I still have 2 jars left. I do need to take the plunge and learn how to can, my mom did all the time but I have seen several people die from botulism and I have just never felt the need to go there. I’ll see. I’m out of freezer room.
