Day 10of21✅ oh I made butternut squash soup today first time ever :-) peeled and diced the squash what a chore...roasted for 30 grilled onions then puréed squash added 4 C veg broth garlic nutmeg salt and pepper voila yummy soup :-) next time I'm going to do less broth to get a thicker soup.

Just recently someone posted a trick for cooking butternut squash -- stab the sgaush 4 or 5 times around the middle and then cook on high in a micro for 8 - 10 minutes. Let sit for 4 or 5 minutes and voila!! It's a snap to cut it or peel it or what ever else you want to do :)

I slice it in half, scoop out the seeds, roast it in the oven and scoop the soft flesh out. Not peeling and chopping.

It is a chore for sure, BUT it is worth it. We like our soup on the thick side.

LOL! When you cook the squash whole in the micro it comes out fully cooked. Peeling is soft and the seeds are easy to scoop out. The flesh can be scooped out or easily cut into cubes :)

Yummmmmm!!! We eat a lot of butternut squash here in Australia. I eat the cooked skin as well.

I did the same with my pumpkins....just added a bit of coconut cream to make it even creamier....and some chilli flakes :)

It's so much better after it sits :-) I love that stuff will def be doing that more often. Today I put some chicken and spinach in it. Yum yum.

Gosh that sounds GOOOOOOOD! I usually put chicken bouillon stock powder in mine when I make it and a little garlic like you have. Must make that more often.
