Oven-fried catfish with roasted brussel sprouts & salad - 526 calories

So silly question but I tried to roast Brussels sprouts and they didnt turn out. Yours look fantastic. Spill please how did you make them?

I don't think the question silly I'd like to know the answer too... Because I got a shopping order the other day and they accidentally got me a bag of brussel sprouts 😆. No offense to the vegetable they're not my favorite so I've never really prepared them. But as you know I'm very adverse to wasting any kind of food so I need to make them yummy so are the kids and I will enjoy them...hopefully. I would love any suggestions on doing that.

Super easy. Trim the bottoms of the brussel sprouts & cut them in half. Cover a large baking pan with foil & spay with Pam. Preheat the oven to 400°. This is 200 grams of brussel sprouts tossed with 15 grams (1 Tbsp) of olive oil & a little bit of Original Tony Chachare Seasoning in a large bowl. Don't season them too much, the seasoning will intensify as the brussel sprouts shrink while roasting. Spread them out (no crowding), cut side down on your pan & roast for 20 minutes at 400° then remove from oven, cool about 5 minutes & enjoy. This made me one very large serving.

It all looks amazing! I've never had catfish. I love roasted Brussels sprouts! i hated brussels sprouts growing up but a few years ago I tried slicing them like you and put them in a frying pan with a FC little EVOO and a,few sliced of bacon, chopped. I cooked the sprouts and bacon together. Still wasn't crazy about Brussels sprouts but it was easier to eat with bacon. 2nd time I liked it all after that I never needed the bacon.

Oh, and Shir, with my house currently for sale I'm not cooking Brussels sprouts or fish! It's all you smell in my house, the kitchen is in the middle of the house!

Kat, I cook the fish on the pan with the veggies. Lightly season with Tony's & a little garlic powder & smoked paprika & rub with a little yellow mustard, then shake in a bag with fish fry (corn flour - I use Slap Ya Mama Cajun Fish Fry) & place on a foil-lined, Pam sprayed pan & bake at 400° for 20 minutes for a 300 gram fillet. Timing is not critical, but unlike most fish, you want catfish fully cooked through & through.

Squeeze a little fresh lemon juice over the fish when you take it out of the oven.

Looks great😋 I made that same salad, my fav! I added red onions, chick peas (for protein) with olive oil and lemon juice! I might add the grapes, next time…without the oil/onions/lemon juice thanks for sharing!
