Every Saturday I go to a Vietnamese Restaurant for lunch with my Mom. It has taken many trials to find the right dish, but I think I've finally done it. Stir fried eggplant, zucchini, mushrooms and red peppers, with shrimp and bay scallops, in coconut milk and green curry. No cornstarch, no noodles or rice. Delicious! Only 288 (estimated) calories and 9.48 net carbs.
