Fasted 23 hours. Had this outrageously delicious dinner, made by me: Chile relleno; half each of one beef and cheddar and one black bean, broccoli, onion and queso fresco enchiladas; vegetarian collard greens with kidney beans; Spanish brown rice and sour cream. I recalculated three times because it was so delicious!

For Becca (and anyone else who may care, lol), I tried again with the chiles rellenos. I made 8 this time, stuffed with refried beans and cheese. I just used flour and did the egg properly. Still used the air fryer. They seem much more authentic and they came out delicious.

But for some reason it seemed to take a lot more work this time! I put the charred peppers in the fridge overnight and peeling them the next day took forever. Was going to ask how you say "pain in the ass" in Spanish, lol. Luckily rm doesn't like them, so I froze the leftovers and I get to enjoy them a few more times!

Jen, another amazing OMAD! You might want to simply put charred chiles in plastic bag and let them sweat, but keep out of the frig. They'll be fine not refrigerated over night. I will double check with Joe and get back to you, to make sure I'm correct. 😊

Okay, best to place charred/blistered chiles into bowl of ice water, then in frig or freezer to be peeled later.

Wow ok. I thought I was making it easier doing the charging ahead but it was not!! In the future, I will plan to sweat them in a bag after charging and then I will peel them. It was like peeling wall paper. Thank you, little mermee!
