Wanted Mac n cheese. This is the compromise. Chickpea pasta.

I figured if i broke out the emergency Mac n cheese in the freezer, it wouldn’t be there for a real emergency. 😬

This does look great. I bought some chickpea powder, I want to try to make that pasta. I hear you have to cook it all the way otherwise it taste terrible. Has anyone ever done this?

KA, I buy it at Target and it's pretty good as long as you don't overcook it, I time it at four minutes in at a rolling boil in salty water. Full of fiber and protein at 23g protein, 13 g fiber in a 3.5 oz dry serving at 340 calories. Brand I use is Banza, orange box. I only ate 2 oz last night though because I wanted chicken. It tastes horrible raw. I tried it once. Not worth it. sk and Chris, you do realize that there are other ways to cook besides a microwave??? gas oven, stove, grill... to name a few. but that's not the emergency I'm saving it for. It's a Stouffer Mac n cheese and it's not a low cal/diet version in any way, shape or form. It's for winter/stress or some as yet undefined event where Mac n cheese is the only way to deal with it. could be a severely twisted ankle, but I'll use frozen peas, or more likely green beans, to deal with any swelling because I'm going to eat the Mac n' cheese. the fact that we're six months into this pandemic and I haven't broken into the box says that the "emergency" must be serious. 😜😜😜

I should mention that air fryer Mac n cheese is pretty epic. Someone had it cut into little squares at a party I went to last year. It was fancy truffle Mac, and it was delicious.
