Zucchini Hash Browns

Yummy and healthy zucchini hash browns that helps with potato cravings.

Ingredients

Directions

  1. Heat oil in skillet.
  2. Mix together zucchini, slightly beaten eggs, salt, pepper, garlic powder and onion powder.
  3. Drop by spoonfuls into the hot skillet.
  4. After browning on one side flip and brown the other side.
  5. Note: substitute egg whites to lower calorie, cholesterol, and fat counts.

These were great and made a lot. I ended up having to add a lot more salt and pepper but still great. A lot of my family members said it reminded them of egg foo young.

These sound too eggy. I make them a little differently. I use more zucchini, sometimes shredded yellow quash too. I shred till I have at least 2 cups. I also squeeze off as much liquid as I can. I add salt,pepper,garlic and lots of grated parm (not the powered junk in the tube but the good stuff) and 2 eggs. Cook em in butter and olive oil till crisp then lay out on a paper towel to drain. Hubby loves em!

Taking into account the other comments about too much egg, I used 1 1/2 cups shredded zucchini and 1/4 chopped onion. (I just put them in my mini processor.) Tasted slightly bland, so I added in a few Tbsp grated parmesean cheese, too. I tried it with 1 egg, but it didn't stick together in the pan. 2 eggs worked perfectly and made a dozen small hash browns. They tasted great!

Flavor was lovely but like a zucchini omlette. I am going to try with half the egg or using just egg white next time.

How do you shred the zuchini? Peal it first and then use a grater?

Hi! I'm new, I have had this recipe for years, my friend's husband is Lebonese & he made them for us (& shared the recipe). I love them & YES they do help with potato cravings. Thanks for reminding me of them.

flavor was ok, but too much egg. It really ended up being like a zucchini omlette. I will also try without egg or half the egg amount.
