Zucchini and Potato Soup

Quick and easy zucchini soup.

Directions

  1. Heat the oil in a large pan.
  2. Add the onions and brown.
  3. Add the water and stock cubes and stir until dissolved.
  4. Add the potato and zucchini and bring to the boil for 20 minutes or until soft.
  5. Blend the soup and serve.
