Vinegar and Salt Sweet Potato Wedges

Sweet potato fries with a twist.

Ingredients

Directions

  1. Preheat oven to 400 °F (200 °C).
  2. Peel sweet potatoes and cut length wise into 8 wedges.
  3. In a large saucepan over high heat, heat the vinegar, sugar, butter, salt, red pepper flakes and water to a boil.
  4. Remove the pan from the heat, and add the potato wedges. Toss to coat.
  5. Spread the potato wedges evenly on a foil lined baking sheet.
  6. Place in oven and roast, turning wedges occasionally for 45 minutes or until the potatoes are very tender and the glaze thickens.
  7. Remove from oven and sprinkle with additional salt if desired.
