Fresh tomato soup with quality ingredients is the perfect low calorie comforter.
Ingredients
Directions
- In a non-stick saucepan heat oil over medium-high heat.
- Add garlic, shallots, cook 5 minutes or until softened and starting to brown.
- Cut tomatoes in large chunks and add to pan.
- Sprinkle tarragon over tomatoes.
- Sauté tomatoes for 5 minutes.
- Add 4 cups of water and bouillon cube.
- Simmer for 20 minutes.
- Put through blender.

Definitely, making it today. I am using a 28 oz.can of diced tomatoes and reducing the water by half. It will give variety to my carrot soup which is also very good and tasty.

Lovely tasting and so quick and easy to make. However,I would strongly advise you to de-skin the tomatoes first as having a mouthful of rolled up bits of skin in every mouthful is pretty annoying.

This was my first time making tomato soup. It was easy and delicious! Thanks! I threw my tomatoes and a half red pepper my magic bullet so I could skip the blender at the end.
