Tiger Prawn Bruschetta

Tiger prawns with fresh tomatoes and basil, served on a bed of sea weed.

Ingredients

Directions

  1. Quarter and remove seeds from tomatoes, then dice.
  2. Mix tomatoes, garlic, salt, pepper, basil and olive oil together.
  3. Divide mixed greens evenly into the center of 4 serving plates. Cut the sushi wrap into strips and place around the mixed greens on each plate. Place one lemon slice onto the bed of mixed greens.
  4. On medium heat saute your tomato mixture with prawns for 3 minutes. Add white wine and saute for 2 minutes more.
  5. Remove from heat and divide the prawns, 4 to each plate. Then spoon the tomato mixture evenly over the prawns. Serve warm.
