Sweet Potato Salad

A potato salad with crunchy vegetables without Miracle Whip Salad dressing that's still sweet.

Ingredients

Directions

  1. Skin the potatoes and chop into bite sized pieces.
  2. Put into a pot of water to boil.
  3. Cup up the remaining vegetables and add to a large bowl.
  4. Boil potatoes until slightly softened. approximately 5 minutes.
  5. Add potatoes to the vegetables. Add mustard and olive oil.
  6. Stir. Refrigerate for 30 minutes or longer before serving.

Reviews 
I had to make a couple of changes. Used green onions, garlic pepper, salt, cayenne, and curry. No celery or red onion. But my version was very tasty. Will make it again.
